CHARACTERISTICS
Coco Sugar is a nutritious substitute for white sugar and artificial sweeteners. It is produced in a fair trade way from the coconut flowers of Indonesia; the nectar is hand-picked by farmers and cooked until it crystallises. Coco sugar has a high mineral content, including potassium, copper and zinc. Plus it has a low glycaemic level (GI 35), is unbleached, free from preservatives, has a slightly caramelised taste, is quite versatile and can be used in the same quantities as conventional white sugar.
